Fingerling Potatoes

Fingerling Potatoes

Fingerling potatoes are small, long potatoes (like fingers).  Ruby Crescent, Russian Banana, French Fingerling or Purple Peruvian are some of the varieties.  You could use small new potatoes instead.
Jacob McLaws ate almost a whole batch in one sitting after high school J  Bon appetite!

1.5 lb fingerling potatoes, halved
½ C butter, melted
2 tsp garlic, minced
1 tsp salt
Juice of one lemon
1 TBL Parmesan cheese, grated
  1. Preheat oven to 350ºF.  Place potatoes in 8 x 8 baking dish.
  2. In a small pan, combine melted butter, garlic, salt and lemon juice.  Pour over potatoes and stir to coat.  Sprinkle parm. Cheese over potatoes.
  3. Bake, covered, for 30 min.  Uncover and bake 10 more minutes until golden brown.
