Apple Pudding Cake


Apple Pudding Cake With Butter Sauce

Ama Shirley and Nana used to make this in the autumn.  Boy, does it bring back happy memories! 
Makes a 9x13 pan. 
CAKE:
2 C sugar (scant)
1/2 C butter, softened
2 eggs
4 large unpeeled apples, shredded
2 C sifted flour
2 tsp baking soda
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp. salt
1/2 C. chopped walnuts

  1. Cream butter and sugar well; add eggs and beat hard. Add apples.
  2. Sift together dry ingredients and stir into creamed mixture. Add nuts.
  3. Pour into greased and floured 9x13 pan. Bake at 350ºF for 45 minutes. 
This cake sometimes falls in the middle.  Oh, well.

BUTTER SAUCE:



1 C real butter
2 C sugar
1 C light cream
1 tsp vanilla


1.      Stir butter, sugar and cream for10-15 minutes over low heat until thickened. Add vanilla and dash of nutmeg. Let cool slightly.

2.     Spoon over serving squares of apple pudding. Actually, just forget the cake and pass the butter sauce around with a straw ;)

Pumpkin Pie Ice Cream Makes 1 quart I spy some dietary restrictions in my future. The doctor’s verdict will be in within a month, so I was hoping that some of the few remaining approved edibles (including coconut) could turn out something muy bueno. They did.
