Crispy-ish Onions & Sweet Potato Peels
1 yellow onion, cut in half-moon wedges
1 medium sweet
potato, peeled
olive oil or butter
salt to taste
- Heat oil in sauté pan on
medium high heat. Add onion and sauté,
stirring frequently about one minute. Reduce heat to medium. Continue stirring often until
golden.
- While onion is cooking,
cut sweet potato in half widthwise.
Using a vegetable peeler, peel sweet potato into pan of
onions. Continue peeling, working
your way around the potato. Repeat with the other half.
- Continue stirring onion
and potato until fairly crisp and golden.
Salt to taste.
