Crispy-ish Onions & Sweet Potato Peels


Crispy-ish Onions & Sweet Potato Peels

1 yellow onion, cut in half-moon wedges
1 medium sweet potato, peeled
olive oil or butter
salt to taste

  1. Heat oil in sauté pan on medium high heat.  Add onion and sauté, stirring frequently about one minute. Reduce heat to medium.  Continue stirring often until golden. 
  2. While onion is cooking, cut sweet potato in half widthwise.  Using a vegetable peeler, peel sweet potato into pan of onions.  Continue peeling, working your way around the potato. Repeat with the other half.
  3. Continue stirring onion and potato until fairly crisp and golden.  Salt to taste.
